Fundamentals of Batch
Freezing
This three day overview of ice cream manufacturing using a batch freezer is essential for anyone who makes their own ice cream, or who wants to learn manufacturing method from award winning operators.
The course is evenly split with classroom lectures and lab time working hands on. You will make lots of ice cream in this course.
Scheduled March 10 -12, 2010 at the University of Wisconsin, Madison. Limit 12 students.
